First, let's talk about the diet for acute pancreatitis. Immediately after an exacerbation and for the next two days, you should not eat at all. All we are allowed is five or six glasses of mineral water. Organ regeneration occurs due to the fact that gastric and pancreatic juice is not secreted.

On the third day, you can eat, but liquid unsalted food with a high carbohydrate content. Wheat crackers, soups with vegetables and cereals, with weak broth are allowed. After that, you can add steam omelets, turkey fillets, chicken, lean fish.

On the fifth day, the calorie content increases to 700-800 kcal, of which 200 g are carbohydrates, 15 g are proteins. Fats are introduced between the sixth and ninth day.

The menu during this period should be as follows:

  • We have breakfast with rice porridge without milk, tea with sugar, orange (apple).
  • Snack with carrot puree (potato), boiled fish or chicken with low fat (50 gr. ), Rose broth.
  • 150 g of broth (vegetables), 30 g of boiled fish (beef), apple puree, mashed potatoes for lunch.
  • Second snack. 50 g cottage cheese (0-2%) with sugar, sweet tea.
  • Instead of dinner - a spoonful of honey and boiling water (250 ml).

Recovery after flare-ups

The diet for pancreatitis after flare-up is more varied. If you try, you can really find more fun and delicious recipes than allowed. We eat 5-6 times a day. It is better to use steam when cooking, to puree everything with a blender, to cook.

You can eat:

  • Meat with minimal fat (chop and cook). Cooking meatballs, steamed cutlets, meat soufflés. Lean beef, rabbit, turkey fillet, chicken, beef are allowed.
  • Fish (you can use pulp, cod, pike, pike perch, turbot and other lean varieties). Boil or steam, steamed cutlets are allowed.
  • Oatmeal, buckwheat, semolina, rice porridge. Barley with corn is rare. Cook in water (or milk and water in equal proportions).
  • Pasta. Do not add sauce, only olive oil, butter. Do not fry with garlic, oil, onions.
  • Dairy products. Whole milk is not recommended. Fermented milk, kefir, cottage cheese up to 9%, mild cheeses are allowed.
  • Egg. Just like an omelette or soft. Use infrequently.
  • Vegetables. Roasted, boiled, mashed, vegetarian soups, pots. Pay attention to carrots, potatoes, melons, beets, peas, cauliflower. You can not eat most of the cruciferous family, mushrooms, horseradish, raw onions, spinach, garlic, beans (generally legumes), sweet peppers, sorrel.
  • We also bake fruit, cook compotes, jellies, make mashed potatoes. Apricots, watermelons, melons are ideal.
  • Dry white bread with pancreatitis, drink salty tea and not rich cookies.
  • Homemade jelly, mousse. Less often, marshmallows;
  • Mineral water, compote, weak tea, rose broth, jelly.

Chronic form

The diet for chronic pancreatitis differs from the menu for acute inflammation. The chronic "version" develops together with an acute inflammatory process of the gland, with cirrhosis, hepatitis, gallstone disease, intestinal and gastric ulcers, atherosclerosis. The menu should take into account the history of the disease that has developed pancreatitis.

The main method of treatment for you is not drugs, but a diet for chronic pancreatitis, an approximate menu of which is based on several principles:

  1. We eat six times a day and little by little products with laxative action are required.
  2. Monitor your daily protein intake. Needed 130 g per day, vegetable protein needs 30% of this percentage. Beef with beef, rabbit, turkey, low-fat pork, chicken and lean fish are recommended. With constant pain, the meat is cooked chopped or steamed. You should not abandon low-fat fish and meat dishes: they will prevent fatty degeneration of the liver, which is characteristic of chronic inflammatory processes in the pancreas.
  3. The fatty transformation is treated with homemade fresh cottage cheese (not sour and with a minimum percentage of fat). Other dairy products are needed. In the first dishes add whole milk, cereals, jelly or drink half a glass a day (if well tolerated). The fat content of milk should not exceed 2. 5%. If you feel well, let's say cheese (a little) with minimal fat and mild varieties. Do not forget the kefir and fermented boiled milk (homemade is the best choice). You do not need to eat store-bought yogurts with flavors and starch: there is little benefit here.
  4. Eggs. Not entirely recommended. Eggs are acceptable as an addition to other dishes, in the form of steam omelette (protein), whipped proteins in other dishes.
  5. Vegetable proteins. We look for them in rice, pasta, yesterday's bread, oatmeal, semolina, toast, buckwheat. Legumes are forbidden.
  6. Fats. There should be 70 in the patient's diet. 80% should be of animal origin. They will be consumed properly with other foods and dishes. Put butter in prepared porridge or pasta before eating. Vegetable oils are allowed if you tolerate them well. Other fats (cooking, beef, margarine, pork) are prohibited.
  7. Carbohydrates. They need up to 350 g per day. These are honey, sugar, syrups and jams. You should eat semolina, oatmeal, buckwheat, pearl, rice, pasta. From vegetables, carrots and beets, potatoes, melons (zucchini, squash, squash) are acceptable. It is better to cook them in steam or water, steam pudding is also suitable, it would be ideal to eat vegetables in the form of mashed potatoes. Do not eat them raw. Bread is allowed white, black, gray.
  8. Fruit. They mainly need apples of non-acidic varieties. Bake, wipe, boil compote. For the latter, dried fruits are suitable.
  9. Sauces. Of all the variety with pancreatitis, a béchamel of flour and milk is allowed. Do not pass the flour, add a little salt.
  10. First meal. We never deny them. Cereals, vegetables, lean poultry, meat, fruits, dairy soups are allowed.
  11. Drinks. In addition to the aforementioned compote, it is useful to drink fruit juices, tea with milk, mineral water.
  12. Supplements, special products. Add protein powder and vitamins to your diet.

Do not eat too much, the volume of food (plus all the liquids you drink) should not exceed two and a half kilos. As strict as a diet for pancreatitis may seem, an approximate menu may not be boring and varied.

Here's how to put one together for use with your chronic illness:

Here's a slightly different approach to diet planning. You can vary the recipes. You need a lot of protein, more fat than in other cases. Carbohydrates are also complex.

The main features of the diet are:

  • We use more protein than normal.
  • Fats and complex carbohydrates are consumed within the limits of our rule, carbohydrates are obtained from cereals.
  • Less than usual are used jam, cakes, pastries, honey, sugar and salt.

During the recession, it is worth giving up substances that irritate the mucous membranes of the gastrointestinal tract. It's not just alcohol - skip the vinegar and any spices.

If depression occurs, the diet may vary. Now not only cooking or steaming food is allowed. You can cook and grill vegetables, fish and meat. Refuse to rub: you are still allowed to eat the whole food. The food should be hot, but not hotter than 60 degrees. Eat 4 to 6 times per beat, taking intervals of up to three hours between meals.

Do not be afraid of mild food and tasteless vegetables. With inflammation of the pancreas, there is also the opportunity to wander into culinary skills. Here is some inspiration and sweets for a sample diet menu for pancreatic pancreatitis.

  1. Cottage cheese cottage in the microwave. Beat the 2% cottage cheese with banana with a blender, add the chopped dates. Bake for about five minutes in silicone molds. Use with natural yogurt (without sugar).
  2. Apple baked with meringue. Wash the fruit, remove the middle, cutting in two parts. Beat the protein and icing sugar separately until thickened. In the process of beating, add 2% cottage cheese to the mixture. Fill the fruit, bake in a regular oven (at 160 degrees) for a third of an hour.
  3. Cookies. Mix the flour (6 tablespoons) with half a tablespoon of olive oil, the same amount of baking powder, hot water and a third of a tablespoon of salt, plus Italian herbs to taste. Wrapped in a layer 3 mm thick and pierced with a fork, bake for a quarter of an hour at a temperature of 170 degrees.
